This method
proves that making great tasting coffee doesn't
have to cost a lot of money.
A four dollar plastic
filter cone will beat out an expensive automatic
drip coffee maker every time, hands down.
Heat some
good quality water. Grind the beans using a fine
(not coarse grind) setting. Use 3 to 5
tablespoons of coffee for each 8oz of water.
After the water boils, place it on the counter
for 30 to 45 seconds so that it cools to about
198 degrees. If you are not using Chemex paper
filters, run some hot water through the "other
kind" to get rid of the papery taste. (Hint: Use
Chemex paper filter when available.) Put the
plastic cone in the vessel of your choice. Put
the paper filter inside the plastic cone. Pour
your coffee grounds into the paper filter. Pour
a small amount of water over the grounds,
allowing them to "bloom" a bit. Next, (very
slowly) pour the rest of the water over the
grounds while stirring gently. Stir. Stir. Stir
some more.
When all the
coffee has drained from the filter it is ready
to drink. Don't let it sit.
Drink it now.
Enjoy.
